Make your own banana syrup at home
Don't have banana syrup on hand? You can easily make your own using a few simple ingredients.
Homemade Banana Syrup
Ingredients
- 2 ripe bananas, mashed
- 40g brown sugar
- 5g cinnamon
- 50ml cold water
Method
1. Add the mashed bananas, brown sugar, cinnamon and water to a small saucepan.
2. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally.
3. Strain through a fine mesh sieve to remove any solids.
4. Allow the syrup to cool completely.
5. Store in an airtight container in the fridge for up to one week.
The cinnamon adds a gentle warmth that works beautifully with both banana and coffee, while the brown sugar creates a rich, caramel-like sweetness that perfectly suits the banoffee flavour profile.

How to make the Banoffee Iced Latte

Ingredients
For one drink, you'll need:
- 1 double shot chilled espresso
- 10g Alchemy Salted Caramel Syrup
- 200ml chilled milk of choice
- 60g Banana Cold Foam
- 6 ice cubes
- 1 banana chip, for garnish
For the Banana Cold Foam
Makes enough for two drinks.
- 60g thickened cream (vegan cream also works)
- 40g milk of choice
- 15g banana syrup
- 5g Alchemy Salted Caramel Syrup
Whisk all ingredients together until light and fluffy, then transfer to a bottle and store in the fridge for up to three days. When ready to use, gently pour over the back of a spoon to create a smooth floating layer.
Method
1. Pour the salted caramel syrup into the bottom of a serving glass and fill with ice.
2. Add the chilled milk, then slowly pour the chilled espresso over the top.
3. Stir gently to combine.
4. Spoon the banana cold foam over the drink, pouring slowly over the back of a spoon so it floats on top.
5. Finish with a banana chip garnish and serve immediately.
