The family-owned Volcán Azul in Costa Rica has over 200 years of experience producing and exporting exceptional coffee. With over 1,500 hectares of preserved rainforest under their care, the family of Volcan Azul care deeply for the global ecosystem and extend this into their agricultural coffee production. Their coffee farms cover three regions of Costa Rica and rely on highly fertile volcanic soils. Their holistic approach is meticulous right from the soil management to varietals planted, ongoing measurements and precisely harvesting only the ripest cherries.
The red honey method starts by centrifuging the harvested cherries, with such precise pressure that only the correctly ripened cherries are pulped. Imperfect cherries are then screened out. This process leaves the cherries with 100% of their mucilage still intact; They are then sun dried for 9 - 12 days. During the first day and overnight, the beans are covered for protection to maintain fermentation temperatures. This precision and care results in an exceptional drinking experience.
