In the central east of the Andes lies the Magdalena Valley and therein the coveted coffee region of Huila. This mountainous region provides varied and complex conditions to produce coffee in kind. Huila produces 20% of Colombia's coffee, while 80% of its farms are quite small and less than three hectares.
Elkin Guzman owns and operates the Finca El Mirador, the family farm that he inherited from his Mother. Being drawn to both science and coffee, Elkin studied agricultural engineering at Cauca University in Popayan. This instilled in him the scientific method and skills to continue methodical research and experimentation on the farm. Elkins skills and interest led him to develop the Natural-Hyrdo-Honey process method. Therein the coffee is picked at peak ripeness, dried as a natural, before being rehydrated and processed as a honey. A unique process that provides a deliciously unique cup.
