The process begins with cherries harvested at a peak ripeness of 20 - 22 Brix, which are then left unwashed to preserve the native yeasts and fungi of the Iris Estate environment. These cherries are placed in sealed tanks and flushed daily with Nitrogen (N2), a technique that ensures incredible clarity in the cup by controlling the fermentation over an extended 4-6 day period. To finish, the coffee undergoes a sophisticated drying process on a multi-tiered raised bed system. By moving the cherries from the highest tier down to the bottom over 25 - 30 days, the team precisely controls the drying rate and moisture reduction. This careful temperature and humidity management results in a cleaner profile with heightened sweetness.
Every step of the Iris Estate process is designed to bridge the divide between producers and consumers, celebrating the true value of quality that begins with the trees. After drying, the beans are stored in their cherry pods within grain-pro bags to stabilize and absorb final layers of fruit complexity before being hulled and vacuum-sealed.
