More about Finca Deborah
We had the pleasure of visiting Finca Deborah back in 2016, and it was obvious that great pride and passion went into everything that they did.
Positioned in the Chiquiri highlands of western Panama, what stood out most about this farm was the care given to the trees and the health of the soil. Understanding the types of shade trees and what they produce to give back to the earth was of great importance. The balance of nature and coffee farming is the key to producing the highest quality of coffee possible. The processing of this coffee is quite unique as it is washed carbonic macerated, which entails the coffee being taken through a light fermentation stage in a controlled closed environment where Co2 has replaced any oxygen. This all culminates in one of the most amazing coffees that you’ll find anywhere in the world. Finca Deborah coffees are internationally respected and loved. They have regularly featured in many national and world barista and brewing championships. The processing profile is “Amber Vivid” which reflects orange, red, and yellow fruits while maintaining a clear, balanced, and “vivid” flavour profile.
