Processing & fermentation - Washed - Dry/ Aerobic fermentation in open tanks, 30 hours of dry fermentation before mucilage is removed and then dried on a drying patio for 7 days.

Impact - Jose Roberto gives great care and attention to the community. He was involved in helping to build multiple schools for the local area and provides ongoing financial support for the local fire brigade and medical services.

Brew Guide - 19.5g//95.4C//45g//19s (Based on commercial equipment. Domestic grinders will require a longer extraction time i.e. the coffee will pour a little longer up to 30secs)

We also think this recipe tastes best with 10 - 15ml of hot water added to the espresso allowing the espresso to open up.

More about our El Morito Espresso 

We are super proud to present this coffee to you! This coffee was purchased at the OOAK (One Of A Kind) Guatemala Auction. The coffees entered into this competition are cupped and assessed by a jury of local coffee tasters where only the best coffees make it through to the final stage; the international round. The international round took place in Guatemala City, where 13 international coffee judges gathered to cup the remaining coffees over 4 days. After the intensive 4 days of cupping the coffees that scored under 87 points were eliminated and the remaining coffees were put into final rankings and placed in the auction. These final 15 coffees were the best-of-the-best Guatemalan coffees from the 2022 harvest season. 

Roasters all around the world received samples to taste and identify coffees they were interested in. The entire team at P&R had the chance to cup these coffees and unanimously we decided to target El Morito which ranked #2 in the auction. Success, this coffee is ours to enjoy!
