More about Finca Santa Monica
From the patriarch of the team that brought us “Jardines Del Eden”, Santa Monica is one of a few farms Jairo Arcila has purchased over the years. His passion for coffee developed from over 40 years as manager at a coffee mill in Quindio. From what Jairo learnt, he transferred his understanding from this mill, establishing several successful farms just outside of Armenia in the Quindio region. This love for coffee has eventually filtered through to Jairos’ Sons, Felipe and Carlos, having found their way to coffee through running a very successful processing plant at Finca La Pradera. They also run and own Jardines Del Eden as mentioned and El Encanto.
La Pradera is where all the magic happens; coffees here are treated with the utmost care and respect by an innovative team. Here they have developed and perfected extended fermentation processes including fruit maceration like this one; inoculated with specific yeasts and mixed with macerated fruit the coffee takes on delicious and clear flavours that work perfectly with coffee and is sure to have your taste buds tingling!
