Joel Tocto, known locally as “The Cupper with Big Dreams”, is responsible for this delicious brew before you. Since his teenage years, Joel has been drawn to complexity in coffee, and this passion led him to become a qualified cupper to better understand the science of flavour behind the beans.
He wants his coffee to be seen as an experience in Australia, carrying through the culmination of his family's careful work to your hands. They treat their coffee crops as if they’re the food they feed their family, with the utmost care.
The Aromas Del Valle cooperative supports over 500 smallholder members in the regions of Jaén, San Ignacio & Cutervo, in Peru. With their support, this lot by Joel has undergone 144 hours of tank fermentation before being dried in controlled solar tents for 170 hours.
