  • 30g matcha powder
  • 15g Alchemy Pistachio Syrup
  • 15g water heated to 70°C
  • 200ml chilled milk of choice
  • 60g Rose Cold Foam
  • 6 ice cubes
  • Crushed pistachios for garnish 

For the rose cold foam

Makes enough for two drinks.

  • 60g thickened cream (or vegan cream)
  • 30g milk of choice
  • 5g rose extract
  • 5g pistachio syrup
  • 10g sugar syrup
  • 2 drops pink food colouring

Whisk all ingredients together until light and fluffy, then transfer to a bottle and store in the refrigerator for up to three days. When ready to use, gently pour over the back of a spoon to create a smooth floating layer.

Method

1. Whisk together the matcha powder, pistachio syrup and 70°C water until smooth and lightly foamy.

2. Pour the mixture into a serving glass.

3. Add ice cubes and top with chilled milk.

4. Stir gently to combine.

5. Spoon the rose cold foam over the top, pouring slowly over the back of a spoon.

6. Finish with crushed pistachios and serve immediately.
