Where it's grown

Piendamo comes from the Cauca region of southern Colombia, an area known for producing coffees with vibrant acidity, sweetness and complexity. This washed lot is produced by Wilton Benitez, one of Colombia's most innovative coffee producers.

Coffee cherries are sourced from producers across Cauca before being transported to Wilton Benitez's facility near Piendamo, where they are processed with exceptional precision and consistency.

Drawing on a background in chemical engineering, Wilton Benitez has built a reputation for combining scientific rigour with coffee production. His approach has earned him recognition for creating coffees with remarkable clarity, consistency and flavour expression.

How it's processed

Piendamo is a washed coffee produced using a carefully managed processing approach.

The coffee undergoes a 36-hour fermentation before being depulped, washed and dried. Throughout the process, Wilton Benitez applies a scientific methodology inspired by industries such as wine and beer production, paying close attention to variables including sugar content and pH.

His focus on research, standardisation and repeatability allows him to consistently produce coffees with distinctive flavour profiles and exceptional cup quality.

Tasting notes and cup profile

Piendamo is bright, expressive and beautifully layered.

In the cup, expect notes of hibiscus, lemonade, plum and kiwi.

Floral hibiscus aromas lead into juicy stone fruit and vibrant citrus notes. Lemonade-like acidity brings energy and freshness, while plum and kiwi add depth, sweetness and complexity. The result is a lively cup with excellent clarity and a sparkling character that remains balanced throughout.

As a filter coffee, Piendamo showcases the precision of its processing and the quality of its origin, delivering a cup that is clean, dynamic and highly memorable.

Why we love this coffee

We love Piendamo because it highlights how thoughtful processing can elevate an already exceptional coffee.

Wilton Benitez's attention to detail and scientific approach have helped shape a coffee that is vibrant, precise and full of character. Every stage of production is guided by a commitment to quality, resulting in a cup that feels polished and expressive.

The flavour profile is a standout, bringing together floral notes, juicy fruit and bright citrus in a way that feels energetic and balanced. Hibiscus, lemonade, plum and kiwi create a cup that continues to reveal new layers as it cools.
