Where it’s grown
The story of this coffee begins in Guji, one of Ethiopia's most celebrated coffee-growing regions.
Around 750 independent farming families contribute cherries to the Jigesa Washing Station. Most farms are small, between two and five hectares, where coffee grows alongside food crops and native shade trees including Birbira, Wanza and Acacia. These farms sit high in the Ethiopian highlands at around 1,850 metres above sea level, where cool temperatures and slow cherry maturation help develop the complexity that Guji coffees are known for.
Every cup of Jigesa Washed represents the work of hundreds of producers who dedicate themselves to growing exceptional coffee year after year.
How it’s processed
While this coffee shares its origin with Jigesa Natural, the path it takes after picking is entirely different.
Once harvested, the coffee cherries are delivered to the washing station where the fruit is removed before drying. By removing the cherry flesh early in the process, the seed can dry in a more controlled environment. The result is a cleaner, brighter and more refined expression of the coffee itself.
The lot is then carefully dried to preserve the floral and fruit characteristics that make Guji coffees so distinctive.
