Introducing Our Mountain Water Decaf beans come from Latin America’s first decaffeination plant that opened in 1983. Situated in Córdoba, Veracruz; the operation has grown and today is recognised worldwide for its quality control, research and development and innovation.
Mountain Water isn’t just a name, the water used is melted glacial water from Pico de
Orizaba [Citlaltépetl], Mexico’s highest mountain.The process is highly complex but put simply the green beans are steamed gently then immersed in water saturated with flavour compounds of coffee. As osmosis occurs, the only property that leaves the beans is caffeine. The essential flavour elements in the beans stay there, balanced by the water already containing the flavour elements. The beans are then dried, analysed and cupped.

What is your Decaf process?
We use a variety of processes depending on the format, always focusing on maximising the quality and flavour of your decaf coffee.
The Mountain Water Decaf Process is quite complex, but put simply, the green beans are gently steamed and then immersed in water saturated with flavour compounds of coffee. As osmosis occurs, the only property that leaves the beans is caffeine. The essential flavour elements in the beans stay there, balanced by the water already containing the flavour elements. The beans are then dried, analysed and cupped.
The ‘Sugarcane Decaf Process’ uses a byproduct of sugarcane, which is mixed with water and used to soak the green coffee and remove the caffeine. This holds onto the sweet and rich coffee flavours, without the caffeine buzz.

Is there zero caffeine in your Decaf?
Due to the complex process, we can never guarantee there will be no traces of caffeine. Although every effort is made to ensure the removal of the caffeine from the beans.

How can I store my coffee?
We recommend storing your coffee in a cool, dry space and out of direct sunlight, like a pantry. You can also keep your beans in your hopper ready to grind or keep them in the bag. Our bags are nitrogen flushed to keep your coffee fresher for longer. However, once you open the bag and the beans are exposed to oxygen, your coffee will naturally start its aging process.
