This Ethiopian coffee variety originates from the Gedio region in Yirgacheffe and thrives on a 120-hectare farm, growing at elevations between 2050m to 2100m with an average annual temperature of approximately 23 degrees Celsius.

In 2020, the region introduced a novel anaerobic processing method for this coffee, involving fermentation of the cherries in sealed, oxygen-deprived fermentation bags or tanks using the carbonic maceration technique. This sealed stainless-steel tank fosters an anaerobic environment, enabling the production of carbon dioxide during the fermentation process. Maintaining the temperature below 25 degrees Celsius, the cherries are fermented for an extended 10 days, allowing for prolonged contact with the mucilage, resulting in delightful sweet fruity flavours and unique wild funky notes.
