Processing & fermentation - Carbonic Maceration. Coffee cherries are placed in sealed tanks and filled with CO2 removing oxygen. The temperature and humidity are controlled for a consistent result. Moderately extended fermentation.

Impact - Coffees grow in small farmers backyards, known as “Garden coffee”, purchasing from these local farmers helps to stimulate the local economy and helps employ casual staff all year round.

More about Uraga Omoro

Tucked away deep in the Ethiopian mountains, Uraga Omoro washing station hides creating some mind blowing coffees.

The roads in and out of this remote area are quite bumpy and challenging which just adds to the expedition this coffee has to go through. This lot is processed as a Natural but put through a fermentation stage that is called “Carbonic Maceration” (CM). This type of fermentation occurs in a closed, oxygen-free environment generally in stainless steel tanks. The tanks are pumped with CO2 and the temperature and humidity are controlled to provide the perfect environment for the intended profile of this lot. The timing of this moderately extended fermentation results in a spectacular balance of all the things you want in a “CM” highlighting fruit and promoting cleanliness of flavour. “Indigo” is the description of the profile, think deep flavours with purple tones.

We find this lot has tonnes of character and amazing fruit notes that work perfectly with the added intensity and juiciness of the extended fermentation. A well rounded “CM” and the perfect addition to the program for this Ethiopian Expedition.
