Our roastery is where all the magic happens. We are deeply dependent on our senses in all stages of the process, however we are also rigorously scientific and utilise the latest software, equipment and technology. Our cupping lab never stops as we constantly grind, slurp and sip to find and roast the best coffees.
We work with Probat, Giesen and Joper roasters with each machine dedicated to a specific task. Beyond that we record vital data and statistics about every roast. We measure, record and analyse each tiny detail of every roast and keep a sample for quality assurance. We pack all our coffee in nitrogen to protect and preserve for maximum freshness. Best of all we are away from the hustle of the city and overlook Lane Cove national park.
